Ingredients:

For the cake:

    • 1 cup Coastal Coffee Roasters brewed coffee (make it bold and punchy!)
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 2 cups all-purpose flour
    • 2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1/2 cup sour cream
    • 1 tsp vanilla extract

For the crumb topping:

  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted

Optional glaze (for an extra coffee kick):

  • 1/2 cup powdered sugar
  • 2 tbsp Coastal Coffee Roasters brewed coffee

Instructions:

  1. Preheat the oven to 175°C. Grease a 9x9 inch square or round baking pan.

  2. Brew your Coastal Coffee ahead of time, letting it cool while you prepare the rest of the ingredients.

  3. Make the crumb topping: In a bowl, combine the brown sugar, granulated sugar, flour, and cinnamon. Add the melted butter and mix until the mixture is crumbly. Set aside.

  4. Prepare the cake batter:

    • In a large bowl, beat the softened butter and sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
    • Gradually add the dry ingredients to the butter mixture, alternating with the sour cream and brewed coffee. Mix until smooth.
    • Stir in the vanilla extract.
  5. Assemble the cake: Pour half of the cake batter into the prepared pan. Sprinkle half of the crumb topping evenly over the batter. Pour the remaining batter on top and finish with the rest of the crumb topping.

  6. Bake: Place the pan in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

  7. Optional glaze: While the cake is cooling, whisk together powdered sugar and brewed coffee for a glaze. Drizzle it over the top of the cake for an extra coffee flavor boost.
